Sautéed Rainbow Chard with Garlic & Lemon

Ingredients
- 4 pounds rainbow chard
- ½ cup canola oil, divided
- 3 large garlic cloves, sliced thin
- Kosher salt and freshly ground pepper, to taste
- ½ teaspoon lemon zest
Preparation
Prepare rainbow chard by discarding thick stems and removing but reserving chard ribs. Cut ribs and leaves separately into 2-inch lengths.
In a large sauté pan, heat ¼ cup canola oil. Stir in garlic and cook over moderately high heat until lightly golden, about 1 minute. Add chard leaves in large handfuls, allowing each batch to wilt slightly before adding more. Season with salt and pepper and cook, while stirring, until the leaves are softened and most of the liquid has evaporated, about 8 minutes.
Transfer chard to a colander over a bowl. Repeat process with rainbow chard ribs, stirring occasionally, until crisp-tender, about 5 minutes. Stir in wilted chard leaves and season with salt and pepper. Transfer to a bowl, sprinkle with the lemon zest and serve immediately.
