Mustard-Seared Burger

Raise your grilling game with this mouthwatering burger, made all the better with a bit of bacon, Cotswold cheese and a quick mustard sear.
Ingredients
Mustard-Seared Burger:
- 12 ounces thick-cut bacon, cut into thin strips
- 2 pounds 85% lean ground beef
- 1 tablespoon Worcestershire sauce
- Kosher salt, to taste
- Cracked black pepper, to taste
- ½ cup yellow mustard
- 5 slices (7½ ounces) Cotswold cheese
Special Sauce:
- ½ cup mayonnaise
- ¼ cup chopped cornichons
- 2 tablespoons stone-ground mustard
- 1 tablespoon ketchup
- ⅛ teaspoon chipotle powder
Assembly:
- 5 hamburger buns
- 1 red onion, sliced
- 2 tomatoes, sliced
- 5 leaves iceberg lettuce
Preparation
In a medium skillet over medium heat, cook the bacon until crisp. Using a slotted spoon, transfer the bacon to a paper towel-lined plate and let cool. Reserve the bacon fat for toasting the buns.
In a large bowl, combine the ground beef, cooled bacon, Worcestershire sauce, salt and pepper. Divide the mixture into 5 equal portions and shape into patties. Cook the burgers on a grill or in a skillet. When they are cooked to your liking, spread the mustard on 1 side of each burger and sear mustard-side down. Repeat the mustard sear on the other side, top each patty with a slice of cheese and remove from heat.
To make the special sauce, combine the mayonnaise, cornichons, mustard, ketchup and chipotle powder.
To assemble, coat the buns with bacon fat and toast on the same grill or pan. Spread the special sauce on the bottom bun, top with the hamburger patty, onion, tomato, lettuce, more special sauce and the top bun.
