Turkey Cranberry Salad

This sweet and savory salad has great texture and flavor, and the homemade salad dressing is a delicious way to use up leftover cranberry sauce!
Ingredients
Cranberry Dressing:
- ⅛ cup cranberry sauce
- 1½ tablespoons Dijon mustard
- 1 tablespoon honey
- ⅛ cup apple cider vinegar
- A pinch of salt
- ⅓ cup extra virgin olive oil
Turkey Salad:
- 1 head of Napa cabbage, chiffonade
- 1 cup cooked and diced turkey
- ¾ cup toasted pecans
- ½ cup cranberry dressing
- ¾ cup crumbled goat cheese
Preparation
For the cranberry dressing, combine cranberry sauce, Dijon mustard, honey, apple cider vinegar and salt in a blender. While blending, drizzle in extra virgin olive oil.
For the salad, stir together cabbage, turkey, pecans and a 1/2 cup dressing in a mixing bowl. Gently toss and top with crumbled goat cheese.
