Customize your quick bread with these easy variations or your own favorite fruits, nuts and spices!
Ingredients
- 1 cup shredded or mashed fruit
- ½ cup vegetable oil
- ½ cup yogurt
- 2 eggs
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- ¾ cup granulated sugar
- ¼–1 cup chopped nuts and/or dried fruit
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon kosher salt
- Additional spices
Preparation
Preheat the oven to 350°F. Line a 9x5-inch pan with parchment paper, leaving an overhang on two sides, then coat with cooking spray.
Whisk mashed or shredded fruit with vegetable oil, yogurt, eggs and vanilla.
Separately, whisk together flour, sugar, chopped nuts and/or dried fruit, baking powder, baking soda, salt and additional spices according to chosen variation.
Fold the wet ingredients into the dry ingredients, then pour batter into prepared loaf pan.
Bake 55–65 minutes, until toothpick inserted into the center of the loaf comes out clean. If using a glaze or frosting, let bread cool completely before icing.
BANANA NUT BREAD
1 cup mashed bananas
1 cup chopped walnuts
1 teaspoon cinnamon
¼ teaspoon nutmeg
PEAR HAZELNUT BREAD WITH LEMON GLAZE
1 cup peeled, shredded d’Anjou pears (about 3), squeezed dry
¼ cup toasted hazelnuts, chopped
¼ teaspoon ground cloves
1 teaspoon lemon zest
For the glaze: Combine ½ cup confectioners sugar with 1 tablespoon lemon juice and mix until smooth.
SPICED APPLE WALNUT BREAD WITH CREAM CHEESE FROSTING
1 cup peeled, shredded Pink Lady apples (about 3), squeezed dry
½ cup walnuts
½ cup dried cranberries
½ teaspoon ground ginger
1 teaspoon cinnamon
¼ teaspoon nutmeg
For the frosting: Combine 2 ounces softened butter, 2 ounces cream cheese, 1 cup confectioners sugar and ½ teaspoon vanilla and mix until smooth.
