This matzo-based treat is a clever and tasty twist on brittle that’s almost too delicious!
Ingredients
- 6 sheets unsalted matzos
- 1 cup unsalted butter
- 1 cup light brown sugar, firmly packed
- 1 teaspoon kosher salt
- 1 cup semisweet chocolate chips
- 1 cup toasted chopped macadamia nuts
Preparation
Preheat the oven to 350°F.
Line a sheet pan with parchment paper, then completely line the bottom of the pan with matzo.
In a 4-quart saucepan, stir the butter and brown sugar together over medium heat until the mixture is melted and begins to bubble. Simmer for 3 minutes, stirring constantly. Remove from heat and add salt. Pour over matzo, spreading evenly with a heatproof spatula.
Bake for 15 minutes, watching to be careful that it doesn’t burn. Remove from oven and immediately cover with chocolate chips. Let stand for 3-5 minutes until chocolate is spreadable, then smooth with a spatula for evenness. Sprinkle with chopped and toasted macadamias then let cool completely.
Break into bite-sized shards and store up to one week in an airtight container.
