“Gravlax” Blini

Top mini buckwheat pancakes with smoked "gravlax" salmon for delightful appetizers!
Ingredients
- 1 cup organic buckwheat flour
- ¼ teaspoon sea salt
- 1 teaspoon baking powder
- 2 tablespoons molasses
- 1 egg, well beaten
- 1 cup milk
- 1 tablespoon vegetable oil
- 4 ounces smoked Gravlax salmon
- 3 Tablespoons crème fraiche
- 1 sprig tip of dill
Preparation
Combine buckwheat flour, sea salt, baking powder, molasses, egg, milk and vegetable oil in a bowl, just until wet. Spoon small circles of batter onto medium-hot griddle. Cook until bubbles form around the edges of the pancake. Flip and cook other side.
Top each mini pancake with ½ ounce of smoked Gravlax salmon, ½ tsp. crème fraiche and a small sprig tip of dill. Use pre-smoked salmon or try making your own with our House-Smoked "Gravlax" Salmon recipe.
