Goat Cheese, Fig & Green Apple Grilled Cheese

This remarkably gooey grilled cheese sandwich combines the brightness of fresh goat cheese with the crispy tang of green apples and a little figgy sweetness.
Ingredients
- 1 ounce unsalted butter, softened, divided
- 4 slices blue cheese and walnut bread
- 8 ounces fresh goat cheese
- 2 ounces fig spread
- 4 ounces green apples, sliced thin
Preparation
In a large nonstick frying pan, heat half the butter over medium-low heat.
Spread the remaining butter on one side of each of the four slices of bread, then place bread butter-side-down into the frying pan. Arrange the goat cheese on two of the slices of bread. On the other two slices of bread, evenly distriibute the fig spread and green apple slices.
With the fillings facing each other, place the apple and fig bread slices onto the slices with cheese. Grill for about 1 minute or until golden. Flip the sandwiches and continue to grill until golden brown and crusty.
Serve immediately.
