Limoncello
Limoncello makes a great homemade gift, but make sure to get started early—the process takes two weeks!
Ingredients
- 1 bottle (750 mL) vodka
- 8–10 lemons
- 2 cups simple syrup
Preparation
To zest lemons, use a peeler or a sharp paring knife to carefully slice off the outer layer of lemon, or use a microplane to shred off the zest. Scrape off any pith (the white portion), as it will cause the limoncello to become bitter. When finished, you should have about 1⅓ cups lemon zest.
Combine vodka and lemon zest in an airtight container and place in a cool, dark place for 1 week.
Once infused, strain out zest and add simple syrup. Allow to infuse for 1 more week in the refrigerator.
To make simple syrup, combine 1 cup sugar and 1 cup water in a sauce pan. Bring to boil then remove from heat and let cool.
