Roasted Cauliflower Gratin

Ingredients
- 1 head of white cauliflower
- 1 head green cauliflower
- 1 cup breadcrumbs
- ½ cup melted butter
- ¼ cup grated parmesan cheese
- 2 teaspoon kosher salt
- 2 teaspoon coarse ground black pepper
Preparation
Preheat oven to 450º F. Bring a large pot of salted water to a boil. Cut cauliflower into florettes and immerse in boiling water for 3-5 minutes until tender, then drain. In a large workbowl toss cauliflower gently with melted butter, salt, pepper and breadcrumbs. Place contents of bowl into a casserole dish, top with grated parmesan and bake at 450º F for 10-15 minutes until golden brown.
