This version of gazpacho comes straight from Spain and is a common variation on the classic tomato soup.
Ingredients
- 10 slices country bread, crust removed
- 3½ cups water
- 2 cups green seedless grapes
- ½ cucumber, peeled and seeded
- ¼ cup Marcona almonds
- ¼ cup sherry vinegar
- ¼ cup extra virgin olive oil
- 2 teaspoons kosher salt
Preparation
Combine all ingredients and puree with an immersion blender until smooth. Chill 1 hour before serving.
