Mt. Tam-y Grilled Sammie

This unique grilled cheese offers the rich, creamy flavors of herb Gouda and Mt. Tam Triple Crème. Pair with tomato soup or enjoy it on its own!
Ingredients
- 4 slices sourdough bread
- 1 ounce unsalted butter, softened
- 1 ounce Pecorino Romano, grated
- 4 ounces herb Gouda
- 4 ounces Mt. Tam Triple Crème
Preparation
Butter one side of each of the bread slices. On a plate, sprinkle grated Pecorino Romano, then press the buttered side of each bread slice into the cheese to coat; set aside.
Preheat a greased, medium nonstick frying pan to medium-high heat.
Place bread cheese-side down onto pan. Layer Gouda and Mt. Tam to cover two of the bread slices. Top with remaining slices of bread, buttered sides up.
Grill sandwiches for about 1 minute, until toasted and golden. Flip and continue to grill until golden brown and crisp on both sides.
