Loaded Waffle "Skins" Four Ways

Loaded potato skins get a new spin with this tasty take starring seasoned waffle fries. Choose your favorite flavor combo or try them all!
Ingredients
Waffle "Skin" Base:
- 1 bag (15 ounces) Alexia Waffle Cut Seasoned Fries
Classic Topping (not pictured):
- 6 ounces smoked cheddar cheese, shredded
- 3 ounces bacon bits
- 1 tablespoon crème fraîche
- 1 green onion, bias cut, for garnish
Pizza Topping:
- 6 ounces mozzarella cheese, shredded
- 3 ounces sliced pepperoni
- 1 tablespoon crushed tomatoes
- 6 small basil leaves, for garnish
Mexican Topping:
- 6 ounces cheddar and jack cheese blend, shredded
- 3 ounces carnitas
- 1 tablespoon guacamole
- 1 tablespoon pico de gallo
- 1 sprig cilantro, for garnish
- 1 serrano pepper, sliced, for garnish (optional)
Breakfast Topping:
- 6 ounces cheddar and jack cheese blend, shredded
- 3 ounces breakfast sausage, sliced
- 3 ounces scrambled eggs
- 2 chives, cut into 1-inch pieces, for garnish
Preparation
Preheat oven to 425°F.
Place frozen waffle fries on a lined baking sheet and bake for 12 minutes. Remove from oven, then lightly press a single layer of par-baked waffle fries into each cup of a muffin tin to create a cup shape.
Fill each waffle cup evenly with desired ingredients. Bake for 12 minutes, or until golden brown with the cheese fully melted.
Allow to cool for 3–5 minutes, then remove from muffin tin, garnish, and serve.
