Beef Tenderloin

Beef tenderloin is a premium choice for any feast. Roast whole or cut into three top steaks: filet mignon, chateaubriand and tournedos.
Ingredients
- 1 beef tenderloin roast
- 2 tablespoons kosher salt
- 1 tablespoon cracked black pepper
- 1 tablespoon granulated garlic
- 2 tablespoons olive oil
Preparation
Preheat oven to 225°F.
Season filet roast with kosher salt, pepper and granulated garlic.
Place on roasting rack in the oven for approximately 1 hour and 15 minutes, or to an internal temperature of 115°F.
Heat sauté pan over medium-high heat, add the olive oil and sear filet until browned on all sides. Rest for 15 minutes before carving.
