Ingredients
Shallot Vinaigrette:
- 2 tablespoons minced shallots
- 1½ tablespoons Dijon mustard
- 2 tablespoons Champagne vinegar
- Pinch of kosher salt
- ⅓ cup extra virgin olive oil
Chopped Salad:
- 2 heads romaine lettuce, chopped
- ½ medium sweet red onion, julienned
- ½ cup dried cranberries
- ¾ cup toasted pepitas
- 1½ cups garlic croutons
- ½ cup shallot vinaigrette
- ¾ cup crumbled gorgonzola dolce
Preparation
For the vinaigrette, combine shallots, mustard, vinegar and salt in a blender. While blending, drizzle in extra virgin olive oil to emulsify.
For the salad, mix romaine, onions, cranberries, pepitas, croutons and vinaigrette in a large mixing bowl. Gently toss until well combined and top with crumbled gorgonzola.
