Vegan Mashed Potatoes

These amazing mashed potatoes are made without the dairy, but are still legendary! Made with vegan butter and oat milk, they're as creamy (figuratively speaking) as can be.
Ingredients
- 5 pounds russet potatoes
- 4 ounces unsalted vegan butter, melted
- 8 ounces oat milk, hot
- 6 chives, sliced on the bias
- 2 tablespoons prepared horseradish
- 2 teaspoons kosher salt
- ¼ teaspoon cracked black pepper
Preparation
In a large pot of salted water, boil potatoes until tender, about 45 minutes. Drain and allow to steam for 5 minutes.
Mash or mill the potatoes with the butter and oat milk and mix thoroughly. Fold in chives and horseradish, then season with salt and pepper.
