Sheet Pan Halibut with Pesto Potatoes

For a simply delicious dinner without extra dishes, make this sheet pan feast featuring halibut, asparagus, fennel and potatoes with basil pesto!
Ingredients
- 12 small Yukon gold new potatoes, halved
- ¼ cup basil pesto
- 4 halibut fillets (6 ounces each), skin on and descaled
- Kosher salt, to taste
- Cracked black pepper, to taste
- 2 teaspoons paprika
- 1 bunch asparagus, trimmed
- 2 bulbs fennel, cut into sixths
- 2 tablespoons extra virgin olive oil, divided
Preparation
Preheat oven to 350°F.
Toss potatoes in pesto while oven preheats. Place potatoes onto a sheet pan lined with parchment paper and bake for 8–10 minutes. Remove sheet pan from oven and increase temperature to 425°F.
While oven is heating, season halibut fillets with salt, pepper and paprika, then place on the sheet pan with the potatoes. Add trimmed asparagus spears and cut fennel bulbs to the pan, drizzle with olive oil and season with salt and pepper.
Return pan to oven and bake for 7–9 minutes, depending on size of potatoes, thickness of halibut and desired doneness. When finished, potatoes should be browned with slightly crispy edges.
