Ingredients
- 4 tablespoons butter

- ½ cup heavy cream
- ½ cup Boursin cheese, crumbled
- Kosher salt and fresh cracked pepper, to taste
- 4 teaspoons chopped chives, for garnish
- 4 slices sourdough toast, for serving
Preparation
Preheat oven to 350°F. Bring a kettle of water to a boil.
Line four small ramekins with butter. Crack 2 eggs into each ramekin then top with cream and crumbled cheese.
Place the ramekins in a high-sided baking dish, then pour boiling water into the baking dish halfway up the sides of the ramekins. Cover baking dish with foil and bake 12–20 minutes, until eggs reach desired doneness.
Season with salt and pepper, garnish with chopped chives and serve with buttered toast.
For extra flavorful fun, get creative and try some variations:
- Bacon & Cheddar: Substitute shredded cheddar for the Boursin cheese and add ½ cup bacon bits.
- Black Pepper & Asiago: Substitute shredded Asiago for the Boursin cheese and add extra black pepper.
