Spanish Rice

Also known as Mexican rice, this vibrant, aromatic and flavorful dish makes a splendid side to all sorts of Latin-inspired entrées.
Ingredients
- ¼ cup extra virgin olive oil
- 2 cups long-grain white rice
- 1 teaspoon cumin
- 1 tablespoon chili powder
- ⅛ teaspoon cayenne
- 1 bay leaf
- ½ cup small-diced onion
- 2 cloves garlic, minced
- 1 tablespoon kosher salt
- 2 Roma tomatoes, seeded and small diced
- About 2½ cups water
Preparation
In a medium sauce pot with a lid, heat olive oil over medium heat. Add the rice and toast, stirring constantly, until light golden brown, about 5–7 minutes. If rice begins to brown unevenly, adjust heat accordingly.
When rice is toasted, add cumin, chili powder, cayenne and bay leaf. Toast for 1 minute, then add the onion and garlic. Sauté for 2–3 minutes, until the onion is translucent.
Add the diced tomatoes to a liquid measuring cup, then add water to make 3 cups of total volume. Carefully add the water and tomato mixture to the rice, stir once and cover with a lid. Turn heat to low and cook for 20 minutes.
Fluff rice with fork and cover for 10 minutes before serving.
