Grilled Peaches with Whipped Mascarpone & Spiced Walnuts

Stuffed peaches are the perfect addition to any summer soirée! These ones feature a decadent mascarpone filling and homemade spiced walnuts.
Ingredients
Grilled Peaches:
- 6 peaches
- 2–3 tablespoons unsalted butter, melted
- 1 tablespoon ground cinnamon
- ⅛ teaspoon kosher salt
- 2–3 tablespoons honey, for garnish
- ¼ cup spiced walnuts, rough chopped, for garnish
- About 6 mint leaves, chiffonade, for garnish
Whipped Mascarpone:
- 1 cup mascarpone
- ½ cup crème fraîche
- 2 tablespoons granulated sugar
Spiced Walnuts:
- 3 cups California walnuts
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground allspice
- ½ teaspoon paprika
- ¼ teaspoon ground ginger
- ¼ teaspoon cayenne pepper
- 1 teaspoon brown sugar
- ½ teaspoon walnut oil
Preparation
To make the spiced walnuts, start by toasting all of the spices excluding the brown sugar in a dry pan over medium-low heat until aromatic. Set aside. Toast the walnuts in the pan until aromatic and then toss in the oil and brown sugar to coat. Toss in the spices and stir to completely coat them, then set aside.
Heat grill on high. Cut peaches in half and remove pits. Brush the cut side of each peach with butter, and then dust with cinnamon. Grill peaches cut-side-down for about 1 minute, then rotate 90 degrees and grill for another minute to create grill marks. Remove peaches from grill and place on a serving dish. Let cool.
While peaches are cooling, combine mascarpone, crème fraîche, sugar and salt in a work bowl. Mix with a whisk until firm. Transfer whipped mascarpone mixture to a piping bag with a large star tip. Pipe even portions of mascarpone mixture in the cavity of each peach half.
Drizzle with honey and top with chopped spiced walnuts and mint.
