Peanut Butter Truffles

It's hard to beat homemade confections, especially with decadent DIY truffles like these. Even better, no candy molds required!
Ingredients
- 1 cup peanut butter
- ½ cup unsalted butter, softened
- ¾ cup powdered sugar
- ¼ teaspoon kosher salt
- ½ teaspoon vanilla extract
- ¾ cup white chocolate, melted, plus ¼ cup for garnish (optional)
- 1 cup dark chocolate, melted
- 1 tablespoon coconut or vegetable oil, plus more for shaping balls
Preparation
In a work bowl, combine peanut butter, butter, powdered sugar, salt and vanilla extract. Mix until smooth. Fold in ¾ cup melted white chocolate until evenly incorporated. Chill mixture in refrigerator for about 2 hours until firm.
Scoop peanut butter mixture into ½-ounce portions and shape into balls by rubbing a small amount of oil on the palm of your hand and rolling scoops into even spheres. Place in freezer for 30 minutes to firm.
Melt dark chocolate, add 1 tablespoon vegetable oil and hold warm. Dip chilled balls in chocolate and transfer to a lined baking sheet to set chocolate. Store in refrigerator.
If decorating, melt remaining white chocolate in a double boiler after dark chocolate coating has set. Place melted white chocolate in a piping bag with a small round tip and pipe decoration over the top.
