Chia Smash Breakfast Bars

Ingredients
Base:
- ½ cup rolled oats
- ½ cup pecan pieces
- ½ cup sliced almonds
- ½ cup whole wheat flour
- ½ cup shredded coconut
- 1 ripe banana
- 2 ounces maple syrup
- 1 teaspoon kosher salt
- 2 ounces unsalted butter, melted
Filling:
- 1 jar Chia Smash
Topping:
- ½ cup whole wheat flour
- ¼ cup unsalted butter
- ¼ cup brown sugar
- ¼ teaspoon kosher salt
- ½ cup sliced almonds
- ¼ cup pecan pieces
Preparation
Heat oven to 350°F.
For the base, place rolled oats in a food processor and pulse for 5–10 seconds. Add the nuts and pulse 3–4 times, then transfer to a work bowl or an electric mixer with a paddle attachment. Add the remaining ingredients and mix until well combined. Mixture will be slightly sticky and crumbly.
Line an 8x8-inch baking dish with parchment paper so it comes up the sides approximately 1 inch. (You can also use a larger dish for thinner bars.) Press the mixture into the pan evenly all the way to edges. Bake for 30 minutes.
For the topping, place the flour, butter, sugar and salt in a food processor and pulse until combined. Add the nuts and pulse 2–3 times.
Remove cooked bar base from oven and spread the entire jar of Chia Smash over the top. Spread topping evenly over the Chia Smash and place back in the oven for 12–15 minutes, until golden brown. Remove from oven and let cool to room temperature before cutting into bars.
