Reverse Seared Standing Rib Roast

The best cuts of meat don’t need much else to shine. Simply season this standing rib roast with black garlic-infused salt and cracked black pepper for a magnificent main course.
Ingredients
- 1 standing rib roast (8–10 pounds)
- 6–8 tablespoons Jacobsen Salt Co. Black Garlic Salt
- 4–6 tablespoons cracked black pepper
Preparation
Heat oven to 225°F.
Season roast with black garlic salt and cracked black pepper, then place on a roasting rack on a lined roasting pan. Roast for 3–3½ hours, or until thermometer inserted into the center reads 115–118°F for medium rare to medium. Remove from oven and loosely cover with foil. Let rest 1 hour (temperature will rise to about 130°F).
After 1 hour, heat oven to 500°F. Place roast back in oven to brown for 10–12 minutes. Let rest 10 minutes before serving.
