Grilled Fresh to Market Grass-Fed Sirloin Steak with Chimichurri

Herbaceous homemade chimichurri brightens this simply grilled, grass-fed steak with flavors of garlic, cilantro, vinegar and chili.
Ingredients
Chimichurri:
- 3 cloves garlic
- 1 bunch cilantro
- 1 bunch oregano, picked
- 1 bunch Italian parsley
- ¼ teaspoon chili flakes
- 3 tablespoons sherry vinegar
- 1 tablespoon kosher salt
- ¾ cup olive oil
Sirloin Steak:
- 2 Fresh to Market Grass-Fed Sirloin Steaks (8–10 ounces each)
- 1 tablespoon vegetable oil
- Kosher salt and pepper, to taste
Preparation
To make the chimichurri, combine all ingredients in a blender. Pulse until incorporated but not completely smooth, then reserve.
Heat grill to medium-high heat. Brush sirloin steaks with vegetable oil and season both sides with salt and pepper. Grill steaks 3–4 minutes per side for medium-rare, rotating 90 degrees halfway through on each side to create diamond grill marks.
Remove steaks from heat and let rest 10 minutes before slicing. Serve with chimichurri.
