Pre-Marinated Tacos al Pastor

Al pastor typically involves thin slices of marinated pork shoulder stacked on a spit, cooked and sliced off for tacos. With this simple recipe, our Meat Department has done the marinating for you, so all you have to do is cook it low and slow, prep the taco toppings and enjoy!
Ingredients
- 1½ pounds Nugget Markets' Al Pastor Marinated Pork (pre-sliced)
- 1 tablespoon vegetable oil
- 8 ounces pineapple chunks
- 20–24 corn tortillas (4-inch diameter), heated
- 1 yellow onion, small diced
- 2 jalapeños, minced
- 1 bunch cilantro, chopped
- 2 limes, cut into wedges
Preparation
Heat oven to 275°F.
Stack pork slices in a baking dish and place a skewer through the middle to hold them in place. Bake for approximately 2–3 hours, until the internal temperature reaches 190°F, and the outside is crispy and the inside is tender. Remove from oven to rest for 15 minutes.
Heat oil in a heavy-bottomed sauté pan. Add the pineapple chunks and let caramelize. Shave the pork from top to bottom to create small pieces. Add to the pan with the pineapple and toss.
Serve pork and pineapple on single or double-stacked tortillas with onion, jalapeño, cilantro and lime wedges.
