Shrimp with Saffron Rice & Cucumber Carrot Salad

Eat fresh and healthy with this dish of deliciously marinated shrimp, sweet and savory cucumber carrot salad, and an aromatic saffron rice blend from Path of Life.
Ingredients
- 1 cucumber, julienned
- 2 carrots, julienned
- 1 teaspoon salt
- 1 tablespoon sugar
- ¼ cup rice vinegar
- 1 pound shrimp (21-25 ct.), peeled and deveined
- 1 piece of ginger (2 inches long), ½ minced, ½ fine julienned
- 2 cloves garlic, minced
- 2 limes, juiced
- 1 jalapeño, minced
- 2 tablespoons vegetable oil
- 1 package Path of Life Saffron Rice
Preparation
Combine the cucumber, carrots, salt, sugar and rice vinegar in a work bowl. Toss to combine and let sit for 30 minutes.
In another work bowl, add all remaining ingredients except the oil and rice blend, and allow to marinate for 5 minutes.
Heat the Path of Life Saffron Rice per the package instructions.
Heat a sauté pan on medium-high heat. Drain the liquid from the shrimp, then add to the pan and sauté for 1–2 minutes or until the shrimp is cooked through. Serve shrimp immediately with the saffron rice and cucumber carrot salad.
