Soba noodles are thin, Japanese noodles made of buckwheat flour and wheat flour. They are roughly as thick as Italian spaghetti, and are often eaten in a dish called zaru soba (boiled, cold soba noodles with a soy–based dipping sauce). Because they’re made of buckwheat, soba noodles also have several health benefits, including being high in dietary fiber and protein.
