This dreamy yogurt is so decadent you can revel in it as a dessert, but you don’t have to feel guilty eating it for breakfast. Build a yogurt sundae with your favorite flavor plus some sweet treats thrown in, or a breakfast parfait with fresh fruit and your favorite granola. Their Vanilla Bean flavor is such a beautiful balance of creamy and sweet, it goes perfectly in this recipe for individual mini cheesecakes.
Ellenos Mini Cheesecakes
Yield: 12 servings
Prep Time: 10–15 minutes, plus 3–4 hours chilling
Cook Time: 25–30 minutes
Ingredients:
Crust:
- 12 graham crackers
- 6 tablespoons butter, melted
Filling:
- 20 ounces Ellenos Real Greek Yogurt Vanilla Bean
- 2 eggs
- ⅓ cup sugar
- 1 lemon wedge
Preparation:
Preheat oven to 325°F.
Place graham crackers in a zip top bag, seal the bag and use a rolling pin to crush the crackers. Transfer graham cracker crumbs to a mixing bowl and incorporate melted butter until evenly distributed.
In a separate bowl, combine eggs, a squeeze of lemon and Ellenos Real Greek Yogurt Vanilla Bean.
Distribute graham cracker crumbs evenly into each well of a muffin tin, then use the bottom of a drinking glass or measuring cup to press them into a crust. Add filling mixture on top.
Bake for 25-30 minutes.
Allow cheesecakes to cool on counter until they reach room temperature, then cover and transfer to refrigerator to chill for 3–4 hours, or overnight.
