What does bison taste like? Bison tastes very similar to beef. It can have a slightly stronger flavor, with a leaner, cleaner taste.
What kinds of cuts are available? Bison is generally available in cuts similar to beef. We’re proud to carry sustainably and humanely raised New York bison steaks and ground bison from Durham Ranch in Wyoming.
Are bison the same as buffalo? Nope! While they’re often confused, bison are native to North America and Europe while buffalo are generally found in South Asia and Africa.
How do you cook bison? We realize we’re repeating ourselves, but—a lot like beef. Since the meat is lower in fat, it benefits from cooking at a high temperature for a short time (think searing or grilling). Bison has the same internal temperature guidelines for doneness as beef, but be careful not to overcook as it can dry out.
What foods pair well with bison? Simple sides like roasted potatoes or fresh seasonal veggies go great with bison. This meat also goes great on a steak salad and is interchangeable with beef in most dishes.
Okay, bison is a lot like beef. How is it different? Compared to beef, bison is easier on the land (essentially all grass-fed) and emits less greenhouse gas. It’s also lower in fat and calories ounce per ounce, while still high in protein, B12, iron and omega 3s.
