To sprout or not to sprout? Let’s start with grain basics! Grains are seeds of certain plants, mainly cereal grasses such as wheat, buckwheat, rye, barley, and millet.
Grain kernels are a powerhouse of nature, containing the potential of a new plant and is made up of three parts: the germ (that’s the core, rich in nutrients, antioxidants, and vitamins) the endosperm (containing carbs and proteins) and the bran (rich in fiber, vitamin B and minerals).
During a grain’s sprouting process, the endosperm’s enzyme activity converts starches to simple, easily digested molecules. The sprouting process also decreases gluten proteins while increasing folate. This increased enzyme activity ups the availability of nutrients, making grains healthier in their sprouted state.
