Amaretto Horchata

For a sweet and spicy sip, try the creamy vanilla horchata in an alcoholic or nonalcoholic version.
Ingredients
Horchata Base:
- 1 cup white rice
- 4 cups water
- 2 tablespoons ground cinnamon
- 1 tablespoon cayenne pepper
- 1 vanilla bean
Alcoholic Version:
- 6 ounces horchata base
- 1 ounce amaretto
- 1 ounce bourbon
- Ice
- Ground cinnamon, for garnish
- Cayenne pepper for garnish
Nonalcoholic Version:
- 8 ounces horchata base
- ½–1 ounce agave sweetener
- Ground cinnamon, for garnish
- Cayenne pepper, for garnish
Preparation
For the horchata base, add rice, water, cinnamon, cayenne pepper and vanilla bean to a bowl and let soak for at least 8 hours. Remove vanilla bean from mixture, blend remaining ingredients and strain through fine mesh screen.
For the alcoholic version, combine horchata base with amaretto, bourbon and ice, then sprinkle with cinnamon and cayenne pepper.
For the nonalcoholic drink, combine horchata base with ½–1 ounce agave sweetener, then garnish with cinnamon and cayenne pepper.
