Memphis-Style Baby Back Ribs

Memphis-style barbecue is one of four dominant regional styles of barbecue in the U.S. Like many Southern interpretations, these ribs are prepared with a dry rub before cooking, and are normally eaten without sauce.
Ingredients
- 2 slabs (approximately 4 pounds) pork baby back ribs
- 3 tablespoons molasses
- 2 tablespoons tomato paste
- 2 tablespoons sea salt
- 2 tablespoons sugar
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablsepoon chili powder
- 1 tablespoon soy sauce
- 1 teaspoon cayenne pepper
Preparation
Preheat oven to 350°F.
Lay out ribs on work surface.
Mix remaining ingredients thoroughly in a work bowl. Rub mixture generously onto ribs, coating both sides evenly. Double wrap ribs with aluminum foil, creating as close to an airtight seal as possible to create steam in the cooking process.
Place foil-wrapped ribs onto baking sheet and bake for 1½ hours. Remove ribs from oven and unwrap, leaving the ribs in the foil; the meat should have pulled away from the bones exposing the tips.
Raise temperature to 400°F and return ribs to the oven for approximately 30 minutes, or until the ribs have a slightly charred and crispy appearance. Remove from oven and let ribs rest for 5-7 minutes before serving.
