The rich flavors of these simple lamb "lollipops" are complemented by the Latin-inspired yogurt sauce.
- 1 rack of lamb
- 1 tablespoon salt
- 1 tablespoon pepper
- 2 ounces extra virgin olive oil
- 2 tablespoons minced cilantro
- 1 tablespoon minced jalapeño
- 1 tablespoon lime zest
- 2 tablespoons lime juice
- 6 ounces Greek yogurt
- 2 teaspoons ground cumin
- 1 teaspoon salt
Cut the rack of lamb along the bone into chops, then season with salt and pepper.
Make yogurt sauce by combining cilantro, jalapeño, lime zest, lime juice, Greek yogurt, cumin and salt in a bowl. Mix thoroughly, then set aside.
Heat olive oil in a pan over high heat and sauté each piece of lamb for 2 minutes on each side for medium doneness.
Serve with yogurt sauce on the side.
