Grill the perfect leg of lamb with this simple yet delicious recipe.
- 1 boneless short cut lamb leg, butterflied
- 1 bunch Italian parsley, chopped
- 1 bunch rosemary, chopped
- 6 cloves garlic, minced
- 2 teaspoons kosher salt
- 2 teaspoons cracked black pepper
- 2 ounces olive oil
Preheat grill to 350° F.
Combine parsley, rosemary, garlic, salt, pepper and oil in a small workbowl and mix thoroughly. Rub herb mixture over lamb leg until evenly coated, then place onto grill.
Grill lamb leg over medium indirect heat covered for approximately 1 hour, or until a probe thermometer placed into the thickest section reads 135° F.
Rest lamb leg loosely covered with aluminum foil for 12-15 minutes before carving and serving.
Serve with grilled seasonal vegetables.
