This very versatile Swiss Chard dish screams "fall"! The combination of earthy chard, crisp apples and smoky bacon will make your palate sing; delicious!
- 6 ounces bacon, chopped
- 1 yellow onion, sliced
- 1 Gala apple, diced
- 1 bunch Swiss chard, stems sliced thin and leaves coarse chopped.
- 2 tablespoons apple cider vinegar
- salt and pepper, to taste
Cook bacon in a frying pan over medium heat for about 8 minutes, until slightly crispy.
Remove bacon from pan using slotted spoon and set aside.
Add onion to pan using bacon drippings and sauté about 6 minutes until translucent.
Add apples, bacon, chard and vinegar to pan with onions; cover and cook for an additional 8 minutes until tender.
