Long cooking times for poultry can create a dry bird, but the way to create a moist, flavorful turkey or chicken is to brine it. My dad and I used to use this simple brine on all of our poultry and pork no matter what cooking method. You can add white wine, bourbon, star anise, or any other flavors you enjoy to personalize it, and make it fit in with whatever youre serving.
Ingredients
- 8 cups water
- 1 cup kosher salt
- ½ cup dark brown sugar
- 12 to 15 whole black peppercorns
- 12 to 15 juniper berries
- 2 bay leaves
- 1 bunch fresh thyme
- 1 bunch fresh sage
- 1 orange cut into eight pieces
- 2, 7 pound bags of ice
Preparation
Place everything but the ice into a pot over high heat. Bring to a boil. Pour over the ice to cool.
